  • Jar marmite (optional)

Method

  1. Preheat the oven to 220C/200C Fan/Gas 7.
  2. Unroll the pastry onto a baking tray with the longest edge of the pastry facing you.

Chocolate cookies

Ingredients

  • 1 cup plain white flour 120g
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar  50g
  • 1/4 cup brown sugar 55g
  • 1/3 cup chocolate chips (vegan)40g
  • 2 tbsp oat milk, plus more if needed
  • 1 tbsp vegetable oil
  • 1/4 tsp pure vanilla extract

How To Make Vegan Chocolate Chip Cookies

Combine the flour, sugar, baking soda, salt, and chocolate chips in the bowl. Stir well.

Add the non-dairy milk, oil, and pure vanilla extract. Stir to form a cookie dough. It will be dry at first, so just keep stirring and it will suddenly turn into cookie dough.

Optional - Press the dough into one big ball. Refrigerate at least two hours or overnight, or freeze until the dough is cold.

Once chilled, preheat the oven to 160 degrees Celsius. Roll chocolate chip cookie dough balls, and place the balls on a greased cookie tray. Leave enough room between cookies for spreading when they bake.

Cook for 12-14 minutes on the oven’s centre rack. The cookies will look underdone when you remove them from the oven. This is what you want, because they continue to firm up considerably as they cool.
